Easy Salmon Croquettes

Ingredients
  

  • 1 14.75 oz can Salmon remove bones and skin
  • ¼ Cup Onion finely chopped
  • 10 Saltine Crackers crushed
  • ½ Cup Saltine Cracker Meal *You can crush saltines for this
  • 2 Eggs beaten
  • ½ tsp Salt
  • ½ tsp Pepper
  • Oil for frying

Instructions
 

  • Heat oil for frying on medium high heat.
  • Remove skin and as many bones as possible from salmon.
  • Combine salmon, onion, egg, salt, pepper, and parsley.
  • Mold into patties and dredge in cracker meal.
  • Fry patties until golden brown on both sides.
  • Drain on paper towels and serve.
