One of my favorite comfort foods is mac and cheese. I have a few different recipes for this. One I will share with you at some point, is a recipe from way back from my high school days. This one, however, is my FAVORITE! This one is so creamy, cheesy, and gooey! I love that it’s also very easy to make. With this one, you won’t need a roux!

I love using Land O’Lakes extra melt American Cheese. You don’t have to use that one, I know that it is hard to find. If you are using a different brand, add 1 Tbsp of butter. Land O’Lakes has a nice buttery flavor so it’s not needed.
No matter what type of pasta you choose for this, ALWAYS cook to the al dente time. The pasta will continue to cook and nobody like mushy pasta! You can also add bacon to this one for a little more oomph and smoky flavor. If you are a lobster lover, this would be the perfect recipe for a Lobster Mac. The BEST Mac and Cheese
Ingredients
- 2 Cups Uncooked Elbow Macaroni
- 1 Cup Evaporated Milk
- 2 Cups American Cheese grated, I use Land O'Lakes extra melt
- 1 Cup Gruyere Cheese grated
- ½ Cup Sharp Cheddar Cheese grated, plus extra to top
- ½ tsp Salt or to taste
- ½ tsp Pepper or to taste
- ½ tsp Smoked Paprika
Instructions
- Boil noodles using the boxed time for al dente.
- In a saucepan over medium heat, add evaporated milk and grated American cheese.
- Stir constantly until cheese melts. Add Gruyere cheese and stir constantly until melted.
- Add salt, pepper, and cheddar cheese. Remove from heat and stir until cheese melts.
- Drain pasta when finished.
- Combine cheese mixture with pasta in a bowl and mix well.
- Place pasta in a baking dish, sprinkle with extra cheddar cheese and paprika and bake at 350 degrees for 20 minutes.
- Turn oven to broil and broil for 5 minutes.
