For this recipe, I opt for skin on thighs and grilled. I love the crispy skin and the flavor that it adds to the taco. You will still get a juicy chicken if you opt for no skin, however.

I love adding a bit of allspice and agave to mine.

To Grill or Pan Fry or Bake, That is the Question:
Once your meat has spent some time in the marinade, it’s time to cook. But what is the best method? Honestly, you really won’t go wrong with these tacos. While we choose to grill whenever the weather is agreeable, pan frying or baking will also provide a favorable outcome.
When grilling, we strive for charcoal with a temp of 375- 400 degrees. If you are baking, you will want to preheat your oven to 350 degrees. If pan frying, you will want a medium temp and, if possible, use of a cast iron skillet.
Regardless of your cooking method, you will want the internal temperature to 165 degrees. You will want to let the chicken rest for roughly 5 minutes after cooking as well. This will allow for the meat to soak up all of that juicy goodness.

Toppings – The Fun Stuff:
Toppings vary. I’m a huge fan of simplicity with these. I love a bit of cilantro, avocado, and, of course, spicy sauce! My habanero salsa is one of my favorites for these. I love the spice level that the habanero salsa brings to the tacos. It’s, quite frankly, a little bit of heaven.


Chicken Taco - The Ultimate Marinade
Ingredients
- 2 LBS Chicken Thighs we use skin on but you can opt for skinless
- 1 Tbsp Turmeric Powder
- 1 Tbsp Smoked Paprika
- ½ tsp Allspice
- 2 Tbsp Chili Powder I prefer Mexene, but any chili powder will do.
- 2 Tbsp Salt
- 2 tsp Agave syrup
- 4 Cloves Garlic minced
- ⅔ Cup Apple Cider Vinegar
- ¼ Cup Freshly Squeezed Orange Juice
Instructions
- Combine all in a large ziploc bag. Add chicken and place in a refrigerator for at least 30 minutes but preferably overnight.
Grilling
- Heat your grill to a minimum 375 degrees, cook until chicken thighs register 165 degrees.
Pan Frying
- Heat your skillet with a bit of oil over medium heat. Cook chicken until thighs register 165 degrees.
Baking
- Heat oven to 350 degrees.
- Bake chicken until the thighs register to 165 degrees.
