Preheat oven to 250 degrees.
Combine cayenne, paprika, sugar, and salt in a bowl.
Whisk egg whites until frothy in a large bowl.
Add seasoning to frothy egg whites.
Add egg white/seasoning mixture to nuts and mix.
Place a silpat sheet on baking sheet. Cover with nut mixture.
Bake for 30 minutes, stirring after every 10 minutes.
Set pan on cooling rack to cool completely.
Break apart and store in airtight container.
