I love peanuts, cashews, almonds, pistachios….ALL nuts. From my previous airline experience, warmed is even better. I love warm, seasoned nuts and think they are the perfect snack to serve at so many events. When I am hosting a get together, I often will have some out for my guests to snack on. It not only provides them with something tasty while they wait for the meal, but it also takes some of the pressure off of this cook!

I have a few different recipes that I go between, depending on the occasion. Today I am sharing the sweet and spicy blend. This will work well with any nut blend. You can also just choose your favorite nut and share that way. I have done these with either just cashews or just almonds.
No matter what option you choose, you and your guests will not be disappointed. These will also last if stored in an airtight container.
When baking, I use a silpat baking mat. This will help to keep some of the liquid off of the nuts while they bake. I bake these at a low 250 degrees, stirring every 10 minutes. When they are completed, they will still be slightly ‘tacky’. This is no problem. You will simply let them cool and then break apart. I keep a box of disposable gloves and utilize them for this step.
These also make the perfect Christmas gift for a co-worker, friend, or that special someone. They never disappoint. In a cute tin or box, they will be a great gift. I always get asked for this recipe and don’t hesitate to share.
I also bake these for a total of 30 minutes, stirring every 10 minutes. Oven times may vary. Watch for burning. If your oven is cooking faster or slower adjust the time.

- 1 Silpat Mat
Ingredients
- 5 Cups Mixed Nuts
- 1 Tbsp Salt
- ½ Cup Sugar
- 2-3 Tbsp Cayenne ***I use 2, but you can add more or less depending on the heat you are looking for.
- 1½ tsp Smoked Paprika
- 2 Egg Whites
Instructions
- Preheat oven to 250 degrees.
- Combine cayenne, paprika, sugar, and salt in a bowl.
- Whisk egg whites until frothy in a large bowl.
- Add seasoning to frothy egg whites.
- Add egg white/seasoning mixture to nuts and mix.
- Place a silpat sheet on baking sheet. Cover with nut mixture.
- Bake for 30 minutes, stirring after every 10 minutes.
- Set pan on cooling rack to cool completely.
- Break apart and store in airtight container.
