Ah the South. Growing up, I am now recognizing that many of the dishes I ate aren’t what the mainstream is accustomed to. Case in point, Salmon Croquettes. What are these? Well, in the South, we are very accustomed to eating out of cans. Yikes, right? Yet, tasty!
One of my moms go to recipes was this one for salmon croquettes. This one is not only a #frugalfriday, it’s a great party appetizer. Make bite sized cakes and you are set with a great garlic aioli or some other dipping sauce.
Growing up, I actually just ate these with ketchup. Yup, I said it. While these can be ‘fancified’, you can also just get really simply and serve them with the red goddess. I have three very picky boys, and they will all eat these that way. Give them a salmon croquette and a bit of ketchup and they are in heaven.

While my recipe is for 4 large croquettes, you can absolutely make bite sized portions for get togethers. Keep that in mind when you are working with the recipe.
I thought it would be fun to each Thursday ‘try it’, meaning try someones recipe or something new. This one is counting as it is a ‘try it’ retro flash back. Calling all home cooks to let me know what happens when you try it. I can’t link to my mom as she’s not really big on the social thing. Just know that I am sharing with her that we are all trying her croquettes…and she is LOVING it!
Recipe Highlights:
- You can puree your own cracker crumbs. I know they sell them, but it’s just as easy to puree the crackers in a blender or food processor. Why buy a box of cracker curmbs as well as crackers.
- When you are crumbling the crackers for this dish, don’t worry if they are finely crunched. The crackers won’t hurt the flavor if they are different ‘sizes’.
- The salt and pepper is to taste. 1/2 tsp of each is my starting point. If you like a bit more or less, go for it.

Easy Salmon Croquettes
Ingredients
- 1 14.75 oz can Salmon remove bones and skin
- ¼ Cup Onion finely chopped
- 10 Saltine Crackers crushed
- ½ Cup Saltine Cracker Meal *You can crush saltines for this
- 2 Eggs beaten
- ½ tsp Salt
- ½ tsp Pepper
- Oil for frying
Instructions
- Heat oil for frying on medium high heat.
- Remove skin and as many bones as possible from salmon.
- Combine salmon, onion, egg, salt, pepper, and parsley.
- Mold into patties and dredge in cracker meal.
- Fry patties until golden brown on both sides.
- Drain on paper towels and serve.
