Ever have the everything bagel? I love those. They have all of the flavors and when combined with the right cream cheese they are such a treat. I created a cookie with the same thought. Inside, they are filled with all of my favorite things in a cookie. You’ve got oatmeal, chocolate, dried cherries, and toffee. This a cookie that cannot go wrong!
The first time I made them, I had guest over. I was making them for Christmas gifts but ended up needing to make a run to the store for more supplies as they didn’t quite make it to the packaging stage. We ended up eating almost all of them as quickly as they were baked.

As with all of my cookie recipes, I highly encourage you to hydrate your dough. Even I have times that I don’t want to wait an entire day for the dough to hydrate. At the very least, don’t preheat your oven until you have the dough mixed. At that point you will be forced to hydrate for as long as it takes for your oven to heat up! Of course, then you have to try and not eat all of the dough while you are waiting to bake!
Once they are finished baking, be sure and set them on a cooling rake to cool completely. These will be crispy on the outside and nice and gooey on the inside. They are also great steaming hot out of the oven, but be careful not to burn your mouth with the giant chocolate chunks!
Recipe highlights:
- Hydrate! Be sure and let your dough have time to hydrate. It’s best to let the dough rest in the fridge overnight.
- Use a quality chocolate for these. Don’t skimp on this ingredient.
- Chop your dried cherries. It’s a better chew when they aren’t quite so large.

The Ultimate Everything Cookie
Ingredients
- 1½ Cup All-purpose flour
- 1 tsp Baking Soda
- 1 Cup Unsalted Butter room temperature
- ¾ Cup Sugar
- ¾ Cup Light Brown Sugar
- 1 Egg room temperature
- 1½ tsp Vanilla
- 1½ Cup Oatmeal
- 1 Cup Dried Cheeries rough chop
- 1 Cup Bittersweet Chocolate rough chop
- 1 Cup Toffee pieces
Instructions
- Preheat oven to 350 degrees
- Cream together butter and sugar for 5 minutes.
- Add egg and vanilla to creamed sugar and blend to combine.
- Combine flour and baking soda. Add to cream mixture, blending on low.
- Fold in oatmeal, cherries, chocolate, and toffee.
- Drop by teaspoon full and bake for 10-13 minutes.
- Cool on cooling rack.
