I love a good BLT. There is something so comfy and cozy about this sandwich. It brings me back to childhood immediately. Growing up, ours were very traditional with the B, the L, the T and a little mayo. Toasting the bread was optional. That basically just meant someone was too lazy to pop the bread in the toaster…or maybe the toaster was broken. Now I like to change things up. Nothing to simple anymore and ALWAYS toasted bread!
What makes this one a step above? The spread! I kick up the mayo and turn it into a roasted garlic basil aioli. This aioli is so AMAZING you will want to eat it with a spoon! Instead of pan frying the bacon, I bake it in the oven. If you haven’t made bacon this way, you may never go back once you try it. I also pepper the outer edges of the bacon for a little extra kick.

Recipe highlights:
- I baked the bacon for this one a baking sheet with a wire rack. If you don’t have one, you can find one here at Amazon. I’m an affiliate, so if you click the link and purchase I may get rewarded. Baking Sheet with Rack
- Use thick bacon for this one and take it out of the package without separating the pieces. Then coat fresh ground black pepper on both outer edge sides.
- Save your bacon grease! You can strain it and store it in the fridge. I love using this when making Rouxs…which you will be making plenty of here.
- Don’t skip roasting the garlic and use real garlic. My spouse loves buying the stuff in the jar. Can’t say we don’t ever use it, but the flavor is just not the same as fresh.
Special Note*** The Roasted Garlic Basil Aioli will make more than enough for a dozen sandwiches.
